Ok I have decided my main is going to be a Jedi Guardian. But I'm trying to decide which skill tree to go down. I'm leaning toward Vigilance, what to you guys think? any recommendations? Also does it make more sense to put all my points into one tree at a time or mix it with defense?

Do you want to DPS or Tank? or something in between?
Vigilance is the DPS tree fir the Guardian where as the Defence tree is the Tank Focus is going to give you a DPS build that has some CC built in.

hhmm i've played alot of DPS melee before ... I cant decide!!! I think I might change it up and go straight melee tank.

See, my plan was to score major brownie points by being a noble Guardian Tank, since there are usually so few tanks and so many DPS (even though I prefer melee DPS as a playstyle.) Now it seems like every Jedi Knight in the entire guild (and a lot of the troopers and consulars) are planning on tanking.
So I'm pretty close to just going Sentinel. XD

I'll admit, I dont know how many operations ill be doing, but they look like alot of fun. looks like ill be going defense. (I like to live!) lol

I was going to go Tanking Guardian until I saw a Tier-7 power called "Plasma Brand" at the top of the Vigilance tree...

At this point I plan to have a knight for my main. However, being new to skill trees like these, I am not sure where I will focus my points on. I am leaning towards being a Hybrid build with some everywhere. I really like the Riposte based skills, so may hunt those down.
